Meatball Appetizers

Last Friday, we had another family get together and decided to eat leftovers plus we made a few appetizers, mostly finger foods and desserts! This meatball recipe is really  delicious, the meatballs soak up the sauce, oh they are so good! Why would you not try this recipe, it is so easy to make and everyone will think you slaved all day!! 🙂

You can purchase ready made meatballs in the frozen food section of your grocery or make you own. I choose to use the ready made meatballs, it just made it easier since I have been cooking for a week already!

Ingredients:
16 ounce jar of Grape Jam
16 ounces of Chili Sauce
1 bag of Meatballs
Crock Pot liners

I doubled this recipe since we had a big crowd. It’s so easy, combine equal parts of grape jam an chili sauce into your crock pot and stir. Add meatballs and stir, set the crock pot on high for 4-5 hours to cook. You might need to cook longer depending on the size of your crock pot. I did not have any crock pot liners so clean up took a little longer. I like to use the crock pot liners, makes for really easy clean-up!

 The meatballs I used were Italian style that had garlic and other spices, they were delicious!

The Chili sauce can be hard to find but the grape jam is easy!

The above picture shows what they look like after mixing everything, turning on the crock pot and placing the lid on top. 

I would suggest stirring the meatballs about every hour if you can! Next picture, they are ready to eat!!! MMM… they are so delicious!

Cream Cheese Spread for Super Bowl Party

This Cream Cheese spread is the best I have ever had and it is addicting. The more you eat the more you want! 🙂

There are only 4 ingredients.

Let the cream cheese soften. Meanwhile, wash the green onions well, and then finely cut the green onions. When I cut the green onions, I always cut down the stalk before finely cutting so that the pieces are smaller.  Finely cut the dried beef. I like to cut and place both the green onions and dried beef onto a plate so that I can gradually add with the cream cheese.

Once the cream cheese has soften enough to work with, slowly add the green onions and beef a little at a time, mixing thoroughly until all of the green onions and beef are incorporated.

Sprinkle in the Accent Seasoning to your taste, mix Accent Seasoning into the cream cheese mixture. Taste, add more Accent Season, mix, taste, continue until you like the flavor. Cover and place in the fridge over night to allow it to set. This also allows time for all the flavors to combine. When you are ready to serve, remove spread from bowl onto your favorite serving dish. You can cover with chopped pecans if you like. Serve with crackers!

2 – 8 oz. packages of Philadelphia Cream Cheese
1 – small jar 2.25 oz. of Armour dried beef
5-6 green onions
Accent Seasoning to taste
Box of your favorite crackers

Chocolate Chip Cake using a Tube Pan

Let me tell you that this chocolate chip cake has 14 ounces of chocolate!!  It is so moist and full of chocolate and so very easy to make. I have been making this cake for over 15 years and from the very first time I made it my children immediately said it was their favorite. They are now grown and it is still their favorite! I get request to make this cake from everyone I know because it is that good.

You can also make this cake using a bundt cake pan instead of a tube pan.

Chocolate Chip Cake using a Bundt Pan

I modified the original recipe many years ago so that I could use more chocolate and to make it really moist. In 2004 I won first place with the cake in a local baking contest.

Above are my ingredients. Preheat your oven to 350 degrees or 325 for confection oven.

Start by grating your semi-sweet chocolate squares, the picture above shows the remaining grating chocolate after mixing the batter. This grated chocolate will be used on top of the cake after baking.

Mix cake mix, pudding, oil and milk. Add eggs one at a time, beat throughly but be sure not to over beat. Stir in chocolate chips and all but 2/3 cups of grated chocolate.

Above is the batter after adding the grated semi-sweet chocolate. Once the cake batter is ready, pour into your prepared pan. You can bake this cake in either a bundt pan or tube pan. This time I used a tube pan but either will work fine. Be sure to prepare your pan with a good spray of Bakers Joy. If you miss this step you will not be able to remove the cake from the pan. Bake for about 50 – 55 minutes or until done depending on your oven.

After the cake has cooled approximately 10-12 minutes, I remove from the pan and then top with the remaining grated semi-sweet chocolate. Once the cake has completely cooled I dust with 10x sugar.

I almost didn’t get a picture of the cake after it was cut, it gets eaten so fast because it is sooo good!!

1 -box Duncan Hine Deluxe Yellow Cake Mix
1 – 3 oz box instant vanilla pudding
1 – cup cooking oil
1 – cup milk 2% or higher
4 large eggs
8 oz semi-sweet chocolate squares – grated
6 oz semi-sweet chocolate chips
