If you’ve read just a few of post, you probably already know that I like to grill, cook and bake. This Chocolate Cheesecake will satisfy any chocoholic, it is addicting. If you like cheesecake, you will like this recipe, it is rich and oh so Chocolatey.

The recipe is easy but it has a good many steps.

Ingredients:
For the crust:
24 chocolate wafer cookies
1 tablespoon grandulated sugar
1/2 stick, 4 tablespoons unsalted butter, melted

For the filling:
9 ounces of semisweet chocolate, chopped
4- 8 ounces packages cream cheese at room temperature
1 cup grandulated sugar
1/2 cup unsweetened dark cocoa powder
4 large eggs

For the crust:
Preheat over to 350 degrees F.

I have made this cheesecake before with a brownie crust. This time I made it with chocolate wafer cookies. In a food processor, pulse the wafer cookies with sugar until finely ground. Add melted butter and pulse until moistened. Press crust into the bottom of a 9 inch non stick spring form pan. Bake until crust is just set, about 3 to 5 minutes. Cool on wire rack.

For the filling:
In a microwave safe bowl, microwave chopped chocolate in 20 second burst, stirring between nurst, until melted and smooth. In a clean bowl, blend cream cheese, sugar and cocoa until well combined, scraping down the edges as needed. Blend in eggs one at a time until combined, be sure not to over blend the eggs. Blend only until the yolk is mixed. Now, blend in melted chocolate until combined. Pour filling over cooled crust and smooth the top.

Wrap bottom of spring form pan tightly with foil and place into a larger, deep baking pan. Pour water into large pan until water reaches about halfway up the sides of the spring form pan to create a water bath.

Carefully place pan in oven and bake at 350 degrees F for about 1 hour. or until center is set and the top looks slightly dry. Don’t over cook or it will not be very creamy, keeping watching every few minutes until the center is set then remove from oven. I know you can’t wait to try the best ever chocolate cheesecake, can you?

Cool cheesecake completely on wire rack. Place pan into the fridge to chill overnight but do not cover the cheesecake. Remove cheesecake from pan after cheesecake has been chilled overnight.

Most of the time I will add chocolate curls, chocolate ganache or fruit to the top of the cheesecake depending on the flavor of the cake.

I also have a really good original cheesecake recipe that is extremely creamy and do die for! My family loves cheesecake, so from my original cheesecake recipe I make many different cheesecakes like Oreo cookie cheesecake, Butterfinger Cheesecake, Chocolate Mousse Cheesecake, Chocolate Chip Cheesecake, Brownie Cheesecake, Turtle Cheesecake, Red Velvet Cake Cheesecake to name a few. I also like to change up the crust depending on the occasion.

And Michael I’ve not forgotten I need to e-mail you the cranberry recipe—this is the first couple of days I’ve had since the holidays that I’ve not had company or had to work at my husband’s store—I’m getting my ducks back in a row, getting caught back up with my life post holidays!! I’ll email it to you tomorrow–my aunt’s version (her top secrecy one) and then mine, the tastiest of the two 🙂

  2. Looks so delicious! I will try your baking method in a water bath, and overnight chill in the pan- never done it quite that way before, but if it improves creaminess, I’m interested in trying it 😉

    • When making a cheesecake, there are several techniques that will help make it creamy. What I find that works best for me is to be sure to get all cold ingredients to room temperature before starting. Add the eggs one at a time but be sure not to over beat them, I barely beat them until the yellow is gone. Never put your mixer on high speed. 😉

  3. Oh.. this is so lovely and decadent looking! I’d give anything for a slice tonight! I have had limited success with a baked cheesecake, so I’d like to try one that is tried and true! I hope you post the other cheesecake recipe sometime soon:D

  4. That looks and sounds very good! I love baked cheesecakes, but rarely make them – for just the two of us they are a bit too decadent! I love any kind of cheesecake, so hope you post another of those recipes one day too. I’ll have to invite guests round! 😉

    • Hello Cathy, I purchased 3 round 5 inch spring form pans for the same reason. It’s just the two of us as well so I only make full size desserts when I have friends or family visiting. I will use the small pans for the cheesecake recipe that makes 3 pans and will give two of them away to friends! I will post the other cheesecake recipe soon! 😉

  5. The recipe looks like it would be really delicious! But could you post recipes on a white background? Printing a black background page uses a LOT of printer ink,especially for recipes that are not formatted for one page! Thank you!

      I am sorry you are having problems printing. I have my web site set up that when you print it does not print the black background. So if it is printing the black background you might need to check your print settings.

  8. Oh how delicious! I’ll take cheesecake any way I can get it. I’ve actually never had a chocolate one before though. Yours turned out great and looks so pretty! I’ve had quite a few crack and fall on me in my time haha. The hardest part is waiting to eat it!

  9. Every time I see something like that I wonder how far I’d have to hike to burn off the calories from a slice, and that usually keeps me from eating it. It sure does look good though and I’d have a hard time saying no if it were here on my table!
